Smoked Gouda Scalloped Potatoes
Sides are the best part of any big dinner, don’t you think? Potato dishes are the way to most people’s heart here in America, and if you add a little extra cheese to anything, there will certainly be no leftovers! Get ready to enjoy some tasty taters with this super cheesy, smoky and rich recipe.
Brussels + Bacon Mac N Cheese
The holidays are upon us, and that means A LOT of traditional dishes are being whipped up in the kitchen. I love this recipe for a fun take on Mac N Cheese or a cheesy casserole. Easy to make, delicious and gone before you know it, this dish is sure to be a yearly request!
Air Fryer Egg Rolls
Who doesn’t like egg rolls!? They’re such an easy snack to make for most dietary restrictions. Veggie, tofu, meat or seafood can be stuffed into these suckers. Per the usual, I pulled out the air fryer for a healthier take on this dish, but you can bake or oil fry this recipe as well! Get ready to dig in, these are addictive!
Brunch Potatoes
Brunch potatoes are my favorite breakfast item, they pair well with eggs any way you like them! I usually layer these flavorful, crispy taters under a couple of over-medium eggs as a skillet, but you can try them with an omelette, egg tacos, quiche and so much more! Quick to prepare and easy to make, try this dish out for your next Sunday brunch!
Air Fried Coconut Shrimp + Garlic Sriracha Aioli
Fried is the only way I can personally eat seafood, and thanks to the invention of the Air Fryer (seriously guys, you need to get one!) I can now have a healthier version of the fried dishes I love. These toasty shrimp are such a delicious bite sized snack, perfect for a Monday Night Football spread! These sweet little sea morsels are perfectly paired with my homemade, garlicy, spicy aioli; you just can’t go wrong with this dish!
Black Bean Salsa
If you’re a big chips and dip person, this is the dish for you! Colorfully delicious whether served warm or cold, and packed with tons of flavor sure to impress everybody! Add in an ice cold beer or margarita and you’ve got yourself a party!
Shrimp Ceviche
We’ve all been there. it’s too hot to cook, but we’re oh-so-hungry! I too have been on the struggle bus of summer laziness, but I am here to tell you that ceviche is the answer! Easy to prepare ahead of time or let’s be honest, last minute, this dish is perfect for a summer taste bud knock out. Enjoy this citrusy shrimp by the pool or bring it to your next weekend get together. You will definitely be getting asked for more, so make a big batch!
Chicken Parmesan
With so many ways to cook this dish up, this recipe takes a simple, traditional approach. Perfect for a quick work night meal, or a comfort food mood, this Chicken Parmesan hits the spot.
Battered Wahoo Fish Tacos
Ever been to Wahoo tacos? It’s a Cali staple (and quite a popular one) so per the usual, I tried to replicate it. Using “Ono” fish is a great choice for this dish because of it’s light, whitefish texture; easily enhanced by anything it cooks with. Paired with some spicy black beans and fresh avo-pico, this is a great poolside snack this summer!
Asian Lettuce Wraps
I love PF Chang’s lettuce wraps, and with most dishes I eat out, I enjoy the challenge of replicating them at home. This dish is bright and spicy, with pops of fresh citrus, garlic and ginger. With the ability to serve cold or warm, this recipe is a must-have for a dinner party. Vegetarian? Swap the chicken for tofu if you prefer meatless!
Meaty Marinara
Who doesn’t love a big bowl of penne? If you ever find yourself in Italy, you’ll be surprised to find that a red sauce is simply just a few smashed Roma tomatoes with basil, over pasta! After spending some time there last summer, I was inspired to find ways to make a red sauce that’s still just as light, but with a little more umph!
Short Rib Stuffed Poblano Peppers, with Cilantro Lime Rice
Stuffed Poblano peppers are a wonderful, easy dish for any lover of Southwest cuisine. These versatile veggies can be prepared on a grill, in the oven, or over an open flame! Great for vegetarians or meat lovers, they can be stuffed with the mixture of your choice!
Brunch Pizza
Brunch pizza is a really great way to cure a hangover, feed some hungry teenagers, or, offer at a midday party you’re hosting! Easy to whip up, you can bet this dish will impress!
