Ingredients

8-10 Yukon Gold Potatoes, peeled and rinsed
1 Cup Whole Milk
1/3 Cup All Purpose Flour
3 TBS Olive Oil
3-4 TBS Butter
3-4 Cloves Fresh Garlic
1 Cup Smoked Gouda Cheese, grated
1 Cup Sharp Cheddar Cheese, grated
1 Cup Parmesan Cheese, grated
1/2 Sweet Onion, diced
6-10 Sprigs Fresh Chives, diced
1 TSP Paprika
1/2 TSP Dried Oregano
1/2 TSP Salt
1 TSP Black Pepper
1 TSP Garlic Powder

Instructions

1. Preheat the oven to 400º. Peel and rinse the potatoes. If using a mandolin, slice them into discs. If cutting by hand, try to evenly slice them as close to 1/8” as possible so they cook evenly.

2. Hand coat the sliced potatoes with 1 TBS olive oil, 1/2 TSP paprika, 1/2 TSP garlic powder, 1 TSP dried oregano, 1/2 TSP black pepper, 1/2 TSP Salt. Set aside.

3 Chop the onion and garlic, grate the cheese(s) and chop the fresh chives. Set aside.

4. Heat up the skillet pan. Add 1 - 2 TBS butter and melt. Add the onion and cook on medium heat until translucent, about 3 - 5 minutes.

5. Make a roux by adding another 1 - 2 TSP butter to the pan. Gradually add the 1/3 cup flour while constantly whisking the mixture. Do not burn it, and if it starts to clump too much, add more butter or a splash of chicken stock and keep whisking until it gets tacky.

6. Add the 1 cup of milk and 1/2 TSP Garlic Powder and continue to whisk until the sauce mixture becomes broken down, blended and starts to thicken. Do not allow it to boil, a nice steady low to medium heat is safe.

7. Add 1/2 cup of the Smoked Gouda Cheese and fresh garlic. Continue to whisk until melted. Once completely mixed, set aside in a large measuring cup for easy pouring.

8. Layer your potatoes across the bottom of your baking dish.

9. Add desired amounts of the Smoked Gouda Cheese, Sharp Cheddar Cheese, and Parmesan Cheese across the potatoes.

10. Pour the sauce mixture evenly across the potatoes and cheese.

11. Add a small handful of fresh chives across the potatoes, cheese and sauce.

12. Repeat as many times as your dish can hold, but at the last layer swap the steps for Potatoes, sauce, cheese, chives. Top with 1/2 TSP black pepper, 1/2 TSP Paprika.

13. Spray/brush a square of aluminum foil with olive oil before covering the baking dish, this will ensure the cheese doesn’t stick to the inside while baking.

14. Cover the dish with the foil, and bake in the over for 30 minutes. At the 30 minute mark, uncover and continue to cook for an additional 25-30 minutes.

15. Remove from the oven, allow to cool for a few minutes, serve with your main course and enjoy!
