Brunch pizza is a really great way to cure a hangover, feed some hungry teenagers, or, offer at a midday party you’re hosting! Easy to whip up, you can bet this dish will impress!

Ingredients

1 Box Jiffy Pizza Crust
1/2 Cup Hot Water
1 Cup Mozzarella Cheese, shredded
4 Cherry Tomatoes, sliced
3 Baby Bella Mushrooms, sliced
3 Medium Eggs
3 Slices Bacon
2 Red Potatoes, thinly sliced
1/3 Red Onion, thinly sliced
Salt + Pepper, as desired
Paprika, as desired
Sage, as desired
Garlic Powder, as desired
Onion Powder, as desired
Dried Basil, as desired
2 Tsp Olive Oil
1/2 Cup flour
2 Basil leaves, julienned
3 Tsp Salsa, for dipping

Instructions

1. Preheat the oven to 425°

2. Mix the dough by putting contents of Jiffy pizza flour into a bowl with 1/2 cup hot water, add garlic powder, paprika and sage for flavor), cover with saran wrap and set aside for 5-10 minutes while the dough rises.

3. Prep your toppings by food processor or knife, and set them aside in bowls or on a cutting board (potatoes, tomatoes, mushrooms, onion, basil).

4. Air fry or pan fry the bacon until it is almost fully cooked, set aside.

5. In the bowl containing your potato slices, add paprika, salt, pepper, onion powder, garlic powder, basil and 1tsp olive oil, coating the potatoes.

6. Toss seasoned potatoes into a hot skillet pan, and flip a few times to evenly sear them, then set aside.

7. Using 1/2 cup flour, roll out the pizza dough using your hands or a rolling pin to the size of your choice.

8. Add dough to a oiled baking sheet or pizza pan.

9. Add potato slices as the first layer above the crust.

10. Add Mozzerella cheese as the second layer, creating small burrows for the eggs to sit in.

11. Add sliced mushrooms around the burrows to create more reinforcement for the eggs, as the third layer.

12. Crack each egg into its burrow (use 3 eggs total).

13. Add bacon slices, tomatoes and sliced onion to the top of the pizza for the final layer.

14. Bake @ 425° for 20 minutes

15. Remove, cut, top with julienned Basil and salsa, enjoy!
