Hearty Turkey Chili

Ingredients

1 Sweet Onion, diced
1 Bell Pepper, diced
1 Jalepeño, diced
3 Cloves Garlic, minced
1 Lime, squeezed for topping
1 Avocado, sliced for topping
3Tbs Cheddar cheese, grated for topping
1 Can Fire Roasted Tomatoes
3 Cans Tomato Sauce
1 Can Tri-Blend Beans
1 Can Chili Beans
1 Can White Beans
1 Can Green Chile’s
1 Cup Beef Stock
1/2 Can Beer
1lb Ground Turkey
Garlic Salt, as desired
Pepper, as desired
Paprika, as desired
Chili Powder, as desired
Garlic Powder, as desired
Onion Powder, as desired
Dried Cilantro, as desired
Cayenne, as desired
Cumin, as desired

Instructions

1. Prep the veggies and set aside in bowls or on a cutting board.

2. Mix the dry spices into a bowl, set aside.

3. Set the Instant Pot to “Sauté” for 5 minutes and brown the turkey adding a little bit of the spices. (If using a skillet, brown the turkey for 3-5 minutes on high, then transfer to crock pot.)

4. Add in the sweet onion, and continue to sauté.

5. Add in the bell pepper, jalepeño, and mix together.

6. Set the Instant Pot or Crock Pot to “Low” and add in 1 can fire roasted tomatoes, 1 can of green chile’s and 3 cans of tomato sauce, mix together.

7. Add in all 3 cans of beans, 1 cup beef stock, and 1/2 can beer, mix together.

8. Add in garlic and spices, mix together.

9. Cover pot, and cook on “low” for 4-6 hours. Before serving, add a few dashes of Cholula or Tapatío, mix together.

10. Serve in your favorite chili bowl, and top with cheese, sour cream, avocado, cilantro and lime. Enjoy!
