Shrimp Ceviche
We’ve all been there. it’s too hot to cook, but we’re oh-so-hungry! I too have been on the struggle bus of summer laziness, but I am here to tell you that ceviche is the answer! Easy to prepare ahead of time or let’s be honest, last minute, this dish is perfect for a summer taste bud knock out. Enjoy this citrusy shrimp by the pool or bring it to your next weekend get together. You will definitely be getting asked for more, so make a big batch!

This dish is best when using SUPER FRESH shrimp, if you do not have access to fresh shrimp, use frozen and par-boil before curing in the lime juice. The citric acid in the lime breaks down the proteins in the shrimp and prepares the meat for safe eating; turning the flesh an opaque pink and destroying harmful bacteria.

Ingredients
1/2 LB Raw or Frozen Shrimp
10 Limes, juiced
1 Avocado, diced
10 Cherry Tomatoes, diced
1/3 Red Onion, thinly sliced
2 Cloves Garlic, minced
1/3 Cup Yellow Corn
1 Cucumber, diced
1 Jalepeño, diced
1/2 TSP Garlic Salt
1/2 TSP Pepper
1/2 TSP Cumin
1/2 TSP Paprika
1 Bunch Fresh Cilantro, chopped
Cotija Cheese, for plating
Instructions
1. If working with fresh shrimp, disregard step one and two. Prep the frozen shrimp by running under cold water in a strainer for 1-2 min, then remove the tails and set aside.
2. In a pot with boiling water, toss the shrimp in, remove from heat and par-boil for 1 minute, drain and place shrimp in a bowl of ice water or run under cold water to stop the cooking process.
3. Slice the cooled shrimp into 3-4 pieces, and set aside. Juice the limes into a large enough bowl to hold the shrimp, add the shrimp into the juice, cover and refrigerate for a minimum of 30 minutes.
4. Prep the remaining fresh ingredients in a separate bowl, add spices and mix thoroughly.
5. Once shrimp is cured, add into the bowl with your fresh ingredients by straining them out of the lime juice with a ladled spoon, mix thoroughly, then add back in a little bit of the lime juice.
6. Mix in fresh cilantro, add Cotija cheese, and dip with tortilla chips or a spoon. Enjoy!
