Ingredients
1 LB Ground Bison
1/2 Sweet Onion, diced
1/3 Red Bell Pepper, diced
1 Jalepeno, diced
3 Cloves Garlic, minced
1 TSP Worcestershire Sauce
2/3 Cup Ketchup
1/2 Cup Texas BBQ Sauce
3-5 Dashes Cholula or Tapatio
2 TBS Tomato Paste
1/2 Can Diced Tomatoes
1/3 Cup Water
3 TBS Brown Sugar
1 TSP Salt
1 TBS Pepper
1 TBS Paprika
1 TBS Dried Cilantro
1/2 TBS Cumin
1/2 TSP Cayenne
2 TBS Butter
4 Brioche Buns
1/2 Cup Fresh Cilantro, chopped for plating
1/2 Avocado, thinly sliced for plating
Instructions
1. Prep the fresh ingredients in bowls and set aside.
2. In a hot skillet pan, brown the bison in butter for 3-5 minutes.
3. Drain the meat in a strainer and set aside. In the same pan add the onions and peppers until softened, then add the meat back in, along with the fresh garlic and lower heat to medium.
4. In a small bowl, combine the ketchup, BBQ sauce, Worcestershire sauce, tomato paste, diced tomatoes, spices, brown sugar, water and hot sauce; mix thoroughly and add into the skillet, coating the meat.
5. Cover and simmer until the sauce thickens, about 7-10 minutes.
6. Toast the brioche buns with butter and dress them with sliced avocado, cilantro and fresh jalepeno.
7. Scoop the meat from the skillet onto the buns, and add pickles or cheese if you’d like! Pair with some fried or chips and enjoy!
