Turkey:
1 LB Ground Turkey
1/4 Red Onion, diced
1/4 Red Bell Pepper, diced
1 Jalepeño, diced
1 Red Potato, diced
1 Can Refried Beans
3 TBS Olive Oil
1/2 Cup Water
Pepper, as desired
Salt, as desired
Garlic Powder, as desired
Onion Powder, as desired
Dried Cilantro, as desired
Paprika, as desired
Cumin, as desired
Shredded Lettuce or Cabbage, for topping
Cotija Cheese, for topping
1/2 Avocado, sliced for topping
Pico de Gallo:
1 Vine Tomato, diced
1/2 Jalepeño, diced
3 TBS Red Onion, diced
1 Lime, squeezed
Salt, as desired
Pepper, as desired
1 Handful Fresh Cilantro, chopped
Instructions
1. Prep the veggies and spices, set aside in bowls.
2. On high heat, add olive oil into skillet pan and sauté the potatoes for 10 minutes.
3. Add the turkey, lower heat, and brown together for an additional 5 minutes uncovered.
4. Add the onions, spices, and 1/2 cup water, cover and simmer for 15 minutes or until the turkey has absorbed all the liquid.
5. While the turkey cooks, heat up the refriend beans and make fresh pico de Gallo by mixing together all its listed ingredients.
6. When the turkey is just about ready, add in the jalepeños and bell peppers, stir, re-cover and remove from heat.
7. When ready, plate your tostadas! Pictured layers are: beans, turkey, lettuce, pico, avocado, and Cotija cheese. Enjoy!
