Air Fried Turkey Taquitos
Ever since I got my Air Fryer I have been obsessed with it, it is such a great tool in the kitchen! These turkey taquitos are light and crunchy making them a healthy, quick and easy meal. Just pair with guacamole, rice & beans or your favorite salsa!

Spicing your own tomato sauce is much more affordable than pre-made skillet sauces. Either way, it turns out delish!
Cooking your sauce into the tasteless turkey until it absorbs is the best way to have the juiciest meat!
Always use fresh ingredients for brighter flavors.
Whats the best way to get great taquito filling? Adding some cheese and blend it down in a food processor!
Easy as 1-2-3 just fill, roll, and place seam side down in the air fryer! Spritz with some cooking oil and you’re almost done.

Ingredients
Taquitos:
1LB Ground Turkey
1 Can Tomato Sauce
1/2 Red Onion, diced
1/3 Bell Pepper, diced
1 Jalepeño, diced
1 Cup Jack Cheese
1/2 TSP Cumin
1/2 TSP Paprika
1/2 TSP Pepper
1/2 TSP Garlic Salt
1/2 TSP Garlic Powder
1/2 TSP Cayenne Powder
1/2 TSP Dried Cilantro
6-8 Flour Tortillas
Cotija Cheese, for plating
Limes, for plating
Pico De Gallo:
1 Tomato, diced
1 Jalepeño, diced
1/3 Red Onion, diced
1 Lime, squeezed
Dash of Cumin
Dash of Pepper
Dash of Salt
Handful Fresh Cilantro, chopped

Instructions
1. Prep the fresh taquito ingredients and set aside in bowls. Preheat the oven to 250º (for keeping the taquitos warm between batches).
2. In a hot pan, brown the turkey for 3-5 min.
3. Add the spices and tomato sauce, cover and simmer on low until sauce is absorbed, about 10 min.
4. Prep the Pico De Gallo, set aside.
5. Once sauce is absorbed into the turkey, remove from heat, add the fresh ingredients (bell pepper, jalepeño, onions), cover, and allow to steam cook for 2-3 min.
6. Add the turkey mixture into a food processor along with 1 cup jack cheese, and pulse a few times until the consistency is smooth.
7. Warm the tortillas before rolling. Add 1 TBS filling to FAJITA size tortillas. Roll tightly, place seam side down int he air fryer, and repeat until full.
8. Spritz the taquitos with cooking spray, place in air fryer and set the degree to 400º and cook for 10 minutes. Be sure to rotate or flip them halfway. If making large batches, place each cooked batch into the oven on a baking sheet to keep warm.
9. When ready, plate with salsa or salsa crema, top with pico and Cotija cheese, or any of your other favorite sauces. Enjoy!
