Creamy Garlic Parmesan Brussels Sprouts with Pancetta

Brussels Sprouts get a bad name, likely due to childhood memories of boiled and salted versions of this underrated veggie. Struggle no more! I absolutely love Brussels, they’re easy to cook and with the right touch, they can stand alone as a main course, or be a wonderful side complimenting a broad spectrum of dishes. Get ready to never eat Brussels Sprouts the same again!

Ingredients

1 LB Brussels Sprouts, halved
4 Gloves Garlic, 2 whole/2 minced
3/4 Cup Pancetta, diced
1/2 Cup Heavy Cream
2 TBS Olive Oil
1 Shallot, sliced
1/2 Lemon, squeezed
1/2 Cup Parmesan Cheese, grated
Salt + Black Pepper, to taste
1/2 TSP Paprika

Instructions

1. Rinse and halve the Brussels Sprouts long ways, then prep the shallot and garlic, set aside.

2. In a large mixing bowl, add the Brussels Sprouts, 1 TBS Olive Oil and spices. Mix thoroughly.

3. In the skillet, on medium heat, add 1 TBS Olive Oil and sweat the shallots (1-2 min). Add the 2 whole garlic cloves and stir gently for 1 min.

4. Add the cubed pancetta and cook until browned, generally 3-5 minutes. Drain the excess oil from the pan and return to the stove on medium heat.

5. Add the Brussels Sprouts and toss in the pan every few minutes until tender. (About 5 minutes)

6. If using an air fryer, transfer the whole pan of ingredients into the air fryer basket and set at 400º for 10 minutes. If you are using an oven, broil them for 7-10 minutes on 400º.

7. Making the sauce is simple and quick. heat up a a smaller sauce pan, add the 1/2 cup heavy cream, lemon juice, 2 minced garlic cloves, salt/pepper and 1/2 cup parmesan cheese. Mix gently on low heat until melted and thickened.

8. Serve the crisped brussels sprouts and top with the garlic parmesan sauce. Enjoy!
