Greek Gyro Salad
Why are salads are so scrumptious? I for one think it’s because I can eat a giant bowls worth and not feel like a stuffed sausage afterwards. But really, lettuce based meals are the greatest! You can pretty much make any theme of salad you can imagine, which is why this week I am sharing seven of my favorite recipes.
Week of Salads / Day One
If you’re vegan/vegetarian, simply leave out the feta and meat!
This salad includes many of the core basics for any Greek dish: tomatoes, cucumbers, onion, olives, parsley, olive oil
Be sure you cut everything the same size when you can, it makes for the perfect bite!
The secret to amazing salad is salting and spicing your ingredients before mixing in.

Ingredients
Salad:
1 Head Romaine, chopped
1/3 Head Iceberg, chopped
2 Cups Spinach, chopped
1/2 Red or Green Bell Pepper, diced
1/2 Cucumber, diced
10 Cherry tomatoes, sliced
1/4 Red Onion, minced
3-4 Pepperoncini Peppers, sliced
6-8 Kalamata Olives, pitted, sliced
1/4 Cup Feta Cheese, crumbled
2 Cups Gyro Meat
1/4 TSP Dried Dill
Salt/Pepper to taste
1/4 Cup Olive Oil
1/2 Lemon, squeezed
1/3 Bunch Fresh Parsley, chopped
Greek Dressing:
1 TSP Honey
1 Clove Garlic, grated (or 1 TSP garlic powder)
1 TSP Dried Oregano
1/2 TSP Salt
1/4 TSP Pepper
1/2 TSP Dijon Mustard 1 Lemon, Squeezed
1/2 Cup Olive Oil
Instructions
1. Chop the romaine, iceberg, and spinach, then add 2 TBS Olive Oil and squeeze 1/2 lemon in. Toss and set aside.
2. Prep all the veggies and set aside.
3. In a small bowl add the tomatoes with a pinch of salt, pepper and olive oil. In a second small bowl, add the cucumbers with a pinch of salt, pepper, dill, and olive oil. Let marinate for at least 5 minutes.
4. Make the dressing by adding all of the dressing ingredients into a bowl and whisk together.
5. If using the gyro meat, reheat in a skillet for 2-4 minutes, set aside.
6. Toss the lettuce with the dressing first, then add the veggies and feta, and toss again until mixed thoroughly.
7. Top the salad with toasted pita if desired. Enjoy!
