Farm-Stand Spinach Salad

I love the Farmer’s Market. I enjoy wandering, testing all the goodies for sale, enjoying the small side conversations with other market-goers, and most of all, finding inspiration for dinner. This salad is summer in a bowl; crisp, seasonal, sweet, salty and filling. Once you set it down on your dining table it gets gobbled right up!

Ingredients

6 Cups Spinach, whole leaf
1/2 Tomato, sliced
1/4 Cup Feta Cheese, crumbled or cubed
1/2 Cucumber, sliced
3-4 Cup Strawberries, sliced
1/4 Red Onion, thinly sliced
1/4 Fuji Apple, julienned
1 TBS Balsamic Glaze
2-3 Hardboiled Eggs, chilled and sliced
1/3 Cup Pepitas
1-2 Slices of Bacon, cooked crisp and chopped
1/2 Lemon, squeezed


Balsamic Vinaigrette:


2 TBS Lemon Juice
1/2 Cup Balsamic Glaze or Vinegar
1/2 Cup Olive Oil
Pinch of Salt
Pinch of Pepper
1 TBS Honey
1 TSP Dijon Mustard

Instructions

  1. Hard boil your eggs however you like. I like to add my eggs into a pot, fill the water to cover the eggs, bring to a boil then turn the heat off, cover and check on them in 10 minutes. Remove from hot water into a bowl of ice water, and let sit for at least 1 hour. Refrigerate overnight if you’d like, otherwise peel, slice, season with salt/pepper and set aside.

  2. Prep the fruit and veggies and set aside. Be sure to salt/pepper the tomatoes and cucumbers.

  3. In a small mixing bowl, mix together the listed vinaigrette ingredients, whisk to gather and set aside.

  4. In a large bowl, add the spinach and squeeze the 1/2 lemon over the leaves. Add the vinaigrette dressing and gently toss.

  5. While that soaks in, cook the bacon well done, chop and set aside.

  6. In the large bowl of spinach, add the strawberries, apples, pepitas and cucumbers, Toss together.

  7. Serve in bowls, top with bacon, feta, tomatoes and eggs. Enjoy!
