This salad needs lots of texture! Add almonds, wonton strips, crisp chow mein noodles or sesame seeds.

Ingredients

2 Chicken Breasts
1 Head Romaine, chopped
3 Cups Iceberg, chopped
2 Cups (any) Cabbage, chopped
1/2 Cup Red Bell Pepper, julienned
1/2 Cup Cucumber, julienned
4-6 Brussels Sprouts, sliced
8-10 Canned Mandarin Oranges
1 TBS Sesame Seeds
1 TBS Sesame Oil
1/2 TSP Salt
1/2 TSP Pepper
1/2 TSP Garlic Powder
3 TBS Wonton Strips or Crispy Chow Mein Noodles

Chicken Marinade:

2 TBS Soy Sauce
2 TBS Hoisin or Teriyaki Sauce
Salt/Pepper to taste

Dressing:

1/4 Cup Sesame Ginger Dressing
1/2 Lemon, squeezed
1 TSP Ginger paste
1/2 TSP Soy Sauce

Instructions

1. Marinate the chicken by mixing the listed ingredients for the marinade and place covered in the fridge for at least 30 minutes. You can grill, bake or sauté the meat. Once it is prepared, chop it into cubes.

2. In a small bowl add the brussels sprouts, 1/2 TSP salt, 1/2 TSP pepper, 1/2 TSP garlic powder and 1/2 TSP Sesame Oil. Toss until coated, place on a baking sheet pan and bake or broil for 5-7 minutes. (300º should do the trick)

3. Chop the romaine, iceberg, and cabbage, toss and set aside.

4. Prep all the veggies/fruit and set aside.

5. In a separate small bowl, add 1/2 cup of Sesame Ginger dressing (store bought or make it, I used store bought). To help give it a bit more of a zing, whisk in the 1/2 Lemon juice, 1 TSP Ginger paste and 1/2 TSP Soy Sauce. Add to the bowl of chopped lettuce and mix until coated.

5. Add the veggies, fruit and chicken to the bowl of lettuce(s), toss again.

6. Plate and top with the wonton strips, brussels sprouts and more sesame seeds. Enjoy!
